Pumpkin Cheese-Cake Balls

Fall is on its way, and pumpkin-everything is on the brain right now for me! My oldest daughter and I try to come up with new ways to use pumpkin each year. Since our cheese-cake balls are such a hit with the kids, we thought a pumpkin cheese-cake ball would be a great addition. I hope you enjoy this creation as much as we did.
My initial attempt wasn’t as successful. I used too much cream cheese and pumpkin so the dough never reached the desired consistency. The pumpkin does make this dough a little looser than my normal cheese-cake ball recipes, but it was nothing we couldn’t fix. The final product looks and tastes as amazing as I thought they would. If you love pumpkin, you’ll love this!
Prepare a yellow cake (be it from scratch or using a box mix) and allow to cool. Using a stand mixer or large food processor, blend the pumpkin, cream cheese, and one-half tablespoon of pumpkin pie spice. Gradually add cake pieces to the mix and combine until it reaches a cookie-dough texture.
Note: A standard pumpkin pie uses one tablespoon of pumpkin pie spice – I didn’t use that much. I recommend you add a half tablespoon, continue to prepare the dough, taste, and decide on your own if needs more. If you don’t like the flavor of the dough – you are not going to like it dipped in white chocolate. While the white chocolate will add additional sweetness, it will not drastically change the overall flavor. You want to be sure you are satisfied with the dough before dipping.
Once satisfied with the flavor of the pumpkin cheese-cake dough, wrap and chill for a minimum of one hour. This dough should be chilled well. If it is not chilled through after one hour and you are in a rush, move to the freezer for 10-20 minutes.
Once the dough is chilled, melt the white chocolate according to the package directions. Roll the cheese-cake balls and dip into the white chocolate. Place final balls on wax paper to harden. *If you notice the dough is leaving traces on the palm of your hand, dust palms with confectioners sugar.
Keep refrigerated until ready to serve.
