Wow! I recently stumbled upon a BOGO sale for vegetable oil that I could not pass up — each bottle came to $1.30! After stocking up on that fantastic find, I had over six bottles of vegetable oil sitting in my pantry. Hanging out. Waiting around for something fun to do (smile)! Then it hit me!
I use vegetable shortening for my cookies instead of butter…
Can’t I just use oil?
I can! and I did!
The result is a cookie that is light, fluffy, and full of the vanilla and sugar flavor we wanted AND my kids say they are the “Best Cookie I’ve Ever Made!” That’s pretty impressive because I make cookies all the time. Of course, if they are the best cookies ever, I need to share them with you, right? Look for the Best Sugar Cookie Recipe Ever (below).
Best Sugar Cookie Recipe Ever
(A Butter Free Sugar Cookie Recipe)
- 4 eggs
- 1 – ¼ cup vegetable oil
- 4 tsp vanilla
- 1- ½ cup sugar
- 4 cups flour
- 3 tsp baking powder
- 1 tsp salt
- 1/4 cup additional sugar
Preheat oven to 350 degrees. Line baking sheet with parchment paper or baking mats.
In a small bowl, stir together flour, baking powder, and salt. Set aside.
Using your stand mixer, mix eggs, vegetable oil, vanilla, and sugar until well combined. Slowly add flour mixture.
Pour ¼ cup granulated sugar into a small bowl. Roll 1 tbsp of dough with your hands and cover with sugar. Gently press cookie flat between the palm of your hand before setting onto your baking sheet.
Bake for 8 minutes.
