Halloween Party Favorite: Monster Brownie Pudding Cup Recipe

I am all about doing things with a BIG impact and the least amount of effort! This spooky treat is the perfect example of a recipe that looks amazing, but really doesn’t require much of you! If you have thirty minutes, you have time to make this monster brownie pudding cup for your kiddos this Halloween.

Before you do anything, bake and cool your brownies, then cut them into 1/2 inch squares.  QUICK TIP: I like to bake brownies for a dessert recipe in the morning, right along with breakfast.  This allows me to continue with my morning instead of waiting around for them to cool.  Another great option is to bake during dinner and plate your Monster Brownie Pudding Cups before you go to bed.

When you’re ready to build your monsters, combine three boxes of vanilla pudding mix with six cups of cold milk.  (If you want to be a little festive, try using pumpkin spice, caramel, or butter scotch instead.) Add a bright Halloween orange food coloring to the mix before it sets.

to Share or Enjoy at Home!

Are you cooking for a crowd or keeping them for yourselves?  If you are making these little monsters for a crowd, grab the smaller 5 oz plastic cups, but if you are looking for a fun Halloween snack for a themed family dinner (or just because you’re an awesome mom!) go ahead and give them a little extra helping with the 9 oz clear cups/single mason jars.

It’s time to build your monsters!  Add 1/4 cup of pudding mix to the bottom of your cup.  Top pudding with 1/4 cup brownie squares. Cover with an additional 1/4 cup of pudding.  (If you are preparing the 9 oz serving, add an additional layer of brownie and cover those with another 1/4 cup of pudding.)

Do you have a great set of kitchen shears? Cut 12 (or 24) marshmallows in half. Place them next to each other in the center of your pudding cup. It add a little more personality if you set the inside of each “eye” back slightly.  Use gel decorating icing to make the center of each eye.  (Another option for the eyes would be melted chocolate, but it is much less mess to use a tube of gel icing instead.)

Monster Brownie Pudding Cups Recipe

(Makes 12 9 oz Cups, or 24 5 oz Cups)

Ingredients:

Directions:

Prepare brownies according to box directions.  Cool and cut into 1/2 inch squares.  Set aside.

Combine 3 boxes of vanilla instant pudding with 6 cups of cold milk.  Add Orange food coloring until you have reached the desired color. Set aside.

Line a baking sheet or serving tray with 12-24 small clear cups or short mason jars. Add 1/4 cup of prepared pudding, top with 1/4 cup brownie squares, cover with an additional 1/4 cup of pudding.  (If you are using tall cups, repeat until you reach the top of your cup with pudding.)

Cut 12-24 marshmallows with kitchen shears. Set two marshmallows atop of each brownie pudding cup to transform them into monsters.  Use decorative gel icing to finish the eyes. Chill and serve!
